MO-nies and Movember



ingredients:

- 1/2 or 3/4 glass of red wine (you can also use other alcohol when baking at home, rum or whiskey is perfect for this purpose
- 250g of unsalted butter
- 2 glasses of sugar
- 4 spoons of cocoa (good cocoa, and actually the more cocoa you add the better! This will not kill you)
- 200 g of dark chocolate
- 2 glasses of flour
- 1 packaging of baking powder
- 4 eggs (free range, bio, actually rather good quality and known source)
- dried fruits (the best is to find own mix, i really love with almonds, raisins and cranberries)



Put wine, butter, cocoa and chocolate in a pot.
Cook slowly until everything is melted and alcohol evaporates.
Mix every now and then.
Set aside to cool down.

Sieve the flour with baking powder to one container.

To our smooth, gorgeous, cold but still liquid wine-cocoa-butter-chocolate mass add 4 whole eggs. 
One at a time and mix vigorously so that the are good combined. Proceed with other 3 eggs.
Then add the sifted flour - add in portions, mix and add again.

At the end add the dried fruits. 
Mix thoroughly.

Put in a baking tin (20x30cm) lined with baking parchment.

Bake in a 150-160 Celsius for about 20-30 minutes.
Cool down slowly.

Belgian baked chicory

Belgian or maybe Flemish  chicory.
Wrapped in aromatic ham.
With cheese.
Baked in a delicate sauce béchamel.
Autumn comfort food!

Quick Cheap Tasty - Belgian baked chicory


ingredients:

- Chicory (medium sized, 2 per person)
- 2 tablespoons flour
- 2 tablespoons butter
- 400 ml of milk
- ½ cup grated cheese (Parmesan, Gruyere) plus a bit to sprinkle on top.


With butter, flour and milk to prepare white sauce.
Season with nutmeg.
Rinse chicory  and cook in sugared water.
When they are soft, remove from water, cool and cut off the ends.
Wrap each chicory  with a slice of ham and place in a casserole.
Sprinkle with grated cheese, pour the sauce and sprinkle on top of the cheese.

Bake for approx. 30-40 in the 18 degrees until top is browned.

Serve hot.

ingredients: 

- 1 avocado 
- bread 
- lemon 
- sesame seeds
- salt, pepper 
- chili or chili flakes
- olive oil 


Thinly slice the bread. 
Drizzle with olive oil. 
Preheat a frying pan, preferably a grill. 
Grill bread untill light golden. 

With avocado and remove the stone liberally sprinkle with lemon juice. 
Peel and cut into quadrants, each quater into three pieces. 
On the top of grilled bread put the pieces of avocado. 

Prepare the dressing.  
In a bowl, mix sesame seeds, lemon juice, salt, pepper and chopped chilli.
Sprinkle over the avocado canape.

Monster burger

Good, tasty idea not only for Helloween but also for children birthdays!

ingredients:

- burger
- cheese
- Meat either, and the lack of
- lettuce
- vegetables
- ketchup
- mayonnaise

Cut the burger in half and toast it.
On the bottom put the salad (before that you can use mayonnaise)
Then the meat or in vegetarian version can be arranged rucola, cucumber, fried egg, etc.

Cut triangles in the cheese - this way, Johnny gets his teeth!
You can pour the ketchup (bloody monster).
At the end we put the top of the burger.
You can briefly bake it in the oven.
I ate my burger cold for lunch.

At the two halves of mozzarella balls, which will serve as the eyes.
You can not stick in the peppercorns or capers.

ingredients: 

- 300g rhubarb 
- sugar 
- 600ml double cream 
- a little butter 
- half a glass of red wine 

Peel the rhubarb, cut into slices. 
Heat the frying pan and melt the butter.
Put sliced ​​of sliced and washed rhubarb and fry. 
After 10 minutes add sugar and fry further. 
When the whole dissolve and thickens, add the wine, preferably dry. 
Cook until most of the liquid has evaporated and cool down. 

Whip the cream to stiff peaks. 
Mix gently with cooked, and cooled down rhubarb.

ingredients:

- 500g oatmeal 
- 3 tablespoons /40 g sunflower seeds 
- 2 tablespoons / 30 g sesame seeds 
- 2 tablespoons / 30 g of flaxseed 
- 100 g almonds (flakes or bars) 
- 1/4 cup / 50 g sunflower oil 
- 1/4 cup / 50 g honey 

mix well all the ingredients  and place on a baking sheet lined with paper. 
Bake 20-30 minutes at 180 degrees (hot air) 

Note - you need to keep an eye while baking, mix all from time to time!

Vegan eggplant paste (gluten and lactose free)

ingredients:

- 1 eggplant
- 1/2 onion
- herbs
- salt
- pepper
- Flax seeds
- A few walnuts
- A tablespoon of ground almonds
- Optional: millet or couscous


Cut eggplant into small pieces, wash and for approx. 10 minutes to soak in water with salt.
Rinse.
Heat a frying pan and fry briefly (without oil) onion cut  into small cubes. 
Throw eggplant, a little water and cook until tender.
Remove excess of water.

In a separate bowl prepare: walnuts, almonds, flax.
If you are allergic to nuts use previously cooked millet or couscous.

Mix eggplant  with the dry ingredients.
Season with salt, pepper and herbs.

ingredients:

- 1/2 cup chopped onion 
- 2 stalks celery, chopped 
- 1 carrot, diced 
- 1/4 cup butter 
- 1 1/2 tablespoons of universal flour 
- 1 1/2 teaspoons curry powder 
- 4 cups chicken broth 
- 1/2 apples, cored and chopped 
- 1/4 cup of white rice 
- 1 skinless chicken breasts, boneless, half - cut into cubes 
- Salt to taste 
- Ground black pepper to taste 
- 1 pinch dried thyme 
-  cream/yogurt



Stir-fry onion, celery, apple and carrot. 
Add meat, spices and vegetable broth. 
Cook for about 20 minutes. 
Add the rice and cook until soft. 


You can finish the soup with blob of yogurt and chopped parsley.

ingredients:

- 1.5 kg of meat
- 6 onions
- Mushrooms from the jar (about 500g each)
- 2 jars of tomato peppers (each about 165g)
- 1 package frozen peas (500g)
- 1 large can of pineapple (about 500g)
- 2 jars of chilli sauce (about 300g each)
- 1 liter of heavy cream
- 1/2 bottle of curry ketchup sharp
- 750 ml of water



Wash meat, dry and cut into cubes. 
Put into a large ovenproof dish. 
Add salt and pepper. 
Peel onion, cut and add to the meat. 
Mushrooms with marinade, drained peppers and frozen peas also add to the pot. 
Drain pineapple with juice and cut into smaller pieces and along with chilli sauce, heavy cream and ketchup add to the meat. 
At the very end add water and mix everything. 

Bake at 200 degrees (pre-heated) / 180 with hot air (not heated) about 1.5 hours. 

In the meantime mix the soup and possibly add a little water.

Veggie pancakes from buckwheat flour - Gluten Free

We all love pancakes!

Quick Cheap Tasty - Veggie pancakes from buckwheat flour - Gluten Free


ingredients:

- 1 cup buckwheat flour
- 1 cup of vegetable puree
- 1 cup of milk such as plant
- 1 egg
- 1 teaspoon salt
- A little bit of pepper
- 3/4 teaspoon baking soda
- Herbs (preferably fresh)

Mix all the ingredients in a bowl.
Fry in a pan with a bit of fat.
Best applied with small portions of dough then it will be easier to turn pancakes.

As one can use for everything puree - for me it was a mix of carrots and peas.
Will also be great with spinach. To purree was more flavorful, you can add a bit of fried: garlic and onions.

Chilli con pollo

ingredients:

- 750g of meat (chicken / turkey)
- 2 cloves of garlic
- 1 chopped onion (I added red)
- 2 red peppers
- 1 green and yellow peppers
- 2 packs Fix Chilli con Carne (Knorr or any other brand)
- 300 ml of water
- 2 cans of tomatoes (preferably cut into small pieces)
- 400g of corn
- Salt, pepper
- Hot peppers, chilli
- A little bit of sugar


Cut the meat into pieces, put on the hot pan and fry.
Squeeze the garlic and add the onion.
Add water, tomatoes and two fixes.
The whole mix.

Cut the peppers and add to the rest.
Cook over low heat.
Add corn.

At the end of the season with salt, pepper, a little sugar, chilli pepper and chilli.

Serve hot with bread or pasta.

ingredients:

- 1 clove of garlic (or more)
- 1/2 cup dry, oily olives, pitted
- 1/2 cup capers in vinegar odecodzonych
- 5 or more anchovy fillets in olive oil
- 1/2 cup canned tuna
- 1/2 tablespoons mustard
- A little bit of lemon juice
- Parsley
- Salt and pepper
- Olive oil

All the ingredients mix blender until a homogeneous mass.
Serve with salad, vegetables as a dip or as a paste sandwich bread.

I skipped anchovies, tuna and capers because they were not in my pantry.

ingredients: 

- Cocoa powder (according to your taste) 
- 1 sweet potato 
- 2 bananas 
- 2 handfuls of oatmeal / coconut chips 


Preheat oven to 200 degrees. 
Peel potatoes, wash and cut into smaller pieces. 
Bake in oven until tender. 

In a blender put all ingredients and blend until smooth. 
Serve chilled.

Lemon ice cream with Limoncello


Lemon ice cream with Limoncello

ingredients: 

- 400 ml of milk 
- Zest of 1 lemon 
- 160 g of fine white sugar (easily you can decrease the amount of sugar)
- 4 egg yolks 
- 150 ml fresh cream 
- 150 ml of juice squeezed from a lemon 
- 100 ml of limoncello 


Boil the milk. 
Add the lemon zest and the leave milk  to strain. 
Whip the egg yolks with the sugar and slowly add the warm milk. 
Again, heat over low heat, but do not boil (to 80 degrees). 
Stir constantly, otherwise it gets scrambled. 
Allow to cool. 
Add the lemon juice and liqueur. 
Cool and freeze. 

From time to time, remove from the freezer and mix or blend. 
Freeze again.

If you make the ice cream for your children just do not add the alcohol!


Banana peanut butter smoothie

ingredients (for 2 people): 

- 2 bananas 
- a handful of peanuts 
- 2 tablespoons of peanut butter 
- oat milk 

Combine all ingredients in a blender or food processor. 
Mix until all is thick and smooth. 

Cool in the refrigerator before serving or toss a few ice cubes.

Salad "Polonaise"

This recipe was in the "drafts" for 6 months.
I do not know why, but I prepared it just now, and I regret that I did it so late!
The combination of flavors - there may not be revealing.
Not everyone likes the pineapple and apple combined in salads.
Here everything fits gently.
In addition you prepare it in 15-20 miutes.




ingredients:

- 1 jar of pickled mushrooms
- 1 can of pineapple
- 1 can of corn
- 1 red apple with peel
- 1 leek (white part)
- 1 fresh cucumber
- Mayonnaise / yogurt
- Fresh parsley (I did not have parsley and added dill)
- Salt, pepper

All vegetables cut into small cubes.
Add mayonnaise / yogurt, finely chopped parsley.
Personally, I recommend to add yogurt, salad is then very light!
Season to taste with salt and pepper.
Place the for a few hours in the refrigerator before use.

ingredients for the bottom:

- 1 and 1/3 cup ground nuts (mix different types, your favorite, use your imagination)  I've used ground almonds and hazelnuts
- 2/3 cup grounded flaxseed
- 5 or 6 tablespoons butter, melted and the cooled

Mix the above ingredients in a bowl with spoon.
Put the cake in to the baking form.

Bake at 180 degrees for 15 minutes (covered with foil alumioniową).
After this time, remove the foil and have a further 15 minutes.
Cool down and prepare the cheese curd.



ingredients for the curd:

- half a stick of butter
- 3/4 cup sugar
- 1 pudding (vanilla or cream)
- package of vanilla sugar
- 6 eggs (I used only the yolk)
- 1kg of cheese cheesecake
- ground walnuts (half of cup)




Mix butter with sugar using mixer to a uniform, fluffy thing.
Add yolks, one at the time.
Slowly start adding the pudding powder and cheese
At the end add the nuts and mix the whole spoon.

Place the curd on the pre-baked bottom 

Bake  60-90 minutes (depending on your oven) at 150-160 degrees.
