Vegan eggplant paste (gluten and lactose free)

Quick Cheap Tasty - Vegan eggplant paste (gluten and lactose free)


ingredients:

- 1 eggplant
- 1/2 onion
- herbs
- salt
- pepper
- Flax seeds
- A few walnuts
- A tablespoon of ground almonds
- Optional: millet or couscous


Cut eggplant into small pieces, wash and for approx. 10 minutes to soak in water with salt.
Rinse.
Heat a frying pan and fry briefly (without oil) onion cut  into small cubes. 
Throw eggplant, a little water and cook until tender.
Remove excess of water.

In a separate bowl prepare: walnuts, almonds, flax.
If you are allergic to nuts use previously cooked millet or couscous.

Mix eggplant  with the dry ingredients.
Season with salt, pepper and herbs.

I've divided my paste an two parts.
One seasoned with garlic and the second chilli flakes.
