Zucchini pancakes

Quick Cheap Tasty - Zucchini pancakes


ingredients:

- 2 zucchini
- 1 egg
- flour
- salt, pepper
- feta cheese
- milk
- the fat for frying

Grate zucchini without ending parts.
Put into a bowl and season with salt heavily.
Leave for about 30 minutes.
After this time the rinse and get rid of excess of water.

In another bowl, break an egg and pour in the milk.
Beat the whole with a whisk.
Season with salt and pepper.

In a skillet heat a little fat and pour it into the batter.
Add the zucchini and mix with a spoon.
Fry on both sides until golden-brown. 
On every pancake put a slice of cheese. 
Fry covered.

Express salad with dried plums

Lunch.
Delicious, isn't it?!

ingredients:

- salad or mix of various salads
- dried plums
- french mustard
- olive oil
- thyme, rosemary
- mayonnaise / yogurt
- honey
- chicken or other kind of meat (if you want and like)

Wash salad and let it drain. 
Wash herbs, dry them with paper towel and cut into small pieces.
In a pot warm up a little bit of olive oil and mustard, after a while add mayonnaise and herbs. 

Put it aside. 

Arrange salad on a plate sprinkled with plums. 
Add meat - cooked chicken (if you want you can add any kind of meat cooked or grilled) and pour warm dressing over the top.

Sweet salad with pheasant

Quick Cheap Tasty - Sweet salad with pheasant

ingredients:

- packaging rocket
- dried fruit with sauce - raisins, apricots (previously cooked with the pheasant and wild boar), but you can also soak them in water or cook with your meat
- meat, I used pheasant, but any kind will do fine
- cherry tomatoes
- two small or one large cucumber
- a handful of dried cranberries
- 2 peppers
- 1 red onion
- sugar

Soak cranberries  in hot water and drain after about 10 minutes.

Finely chop the onion.
Peel the peppers and cut into pieces.
Fry in a pan and when they are soft add the sugar and caramelize
Set aside.

Wash vegetables.
Cut tomatoes (I had only two).
Peel cucumbers and carrots -cut cucumbers to salads and grate carrots.
Mix all well.

Divide into a salad bowls, sprinkle with cranberries and put the meat (can be hot).
On top place caramelized peppers and onions.

Wild boar tenderloin cooked with sauerkraut

Last weekend with my Dad we were chefs in the kitchen.
Venison.
Loin of wild boar, after removing from the oven, turned out to be slightly under cooked.
In the fridge we found sauerkraut leftovers
We have improvised.
And it's pretty good!

The meat turned out to be tender and juicy.

Interesting one- pot meal that can be prepared for Christmas gathering with family and friends.

ingredients:

- tenderloin
- Sauerkraut
- onions


On the hot oil fry the diced onions.
When glassy add sliced meat, fry and season with a bit of pepper.
Toss the sauerkraut, add half a cup of water and cook until tender about 40 minutes.

Cinnamon apple pie

Quick Cheap Tasty - Cinnamon apple pie



ingredients:

- 4 eggs
- 1 cup of sugar
- 2 cups cake flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 2/3 cup oil (eg. From grape seeds)
- 10 grams of walnuts
- 10 grams of raisins or cranberries
- Ok. 70 grams of apples

Beat the eggs with the sugar using mixer
Continue whisking and gradually add flour (about 1-2 tablespoons);
add the baking powder, baking soda, cinnamon, oil gradually.

Throw cranberries and chopped walnuts and then stir with a spoon.
Line baking tray with baking parchment paper (or you can spread fat and sprinkle with semolina porridge)
Pour batter.
Peel the apples, cut out seeds, cut into big pieces and place on cake - pushing them slightly.
Bake in 200 degrees 40-50 minutes.

Gingerbread pudding with millet (gluten free, lactose free)

ingredients:

- 100 g of millet
- gingerbread spice
- orange liqueur adult version
- orange peel
- hazelnuts
- orange peel
- cocoa
- sugar (about 3-4 tablespoons)


Cook millet until soft -then cool.

In a bowl, mix separately: cocoa, gingerbread spice, sugar.
Add cooked millet, liqueur (juice - for children) and blend everything.
Add orange zest, hazelnuts, raisins and cranberries.

Mix with the spoon.
Can be served warm or cold.

Chops of salmon, millet, zucchini and carrot (gluten free, lactose free)


ingredients:

- 2 eggs
- about 400 g fillet of salmon (may be different fish)
- 1 zucchini, grated and drained of excess water
- 1 carrot, grated
- salt, pepper
- 1 cup of millet
- eventually millet flour, if the chops mix is not sticky enough


Remove the skin from the fillet.
Blend fish to a uniform mass.
Add to the bowl taken together zucchini, carrots and spices.
Push the eggs.
Mix.

At that time, cook a glass of millet (in about two cups of water).
It will be even better if it's overcooked porridge - after cooling blend it.
Mousse of porridge, add to the mix and knead tinned vegetable cutlets.

If the total is too thin, you need to add millet flour.
Then when cooking a whole will not come apart.

You can cook, fry or bake in the oven.
I I fried in the pan after about 10 minutes on each side over medium heat.




Carrot jam (gluten free, lactose free)

Why children do not like veggies.
It is a huge mystery.
To cheat them i propose to cook this carrot jam.
You can blend it so there are no carrot stripes.
Carrots are naturally sweet so they combine with cinnamon, cardamon and cloves easily.
A prelude to Christmas.



ingredients: 

- 1 kg of carrots (preferably bio) 
- 1 large orange (preferably bio) 
- Ground cinnamon 
- Ground cloves 
- Gelling sugar 2: 1 

Peel and grate the carrots on a small mesh. 
Peel orange and cut into pieces. You can use other citrus fruits instead. 
In a saucepan put the carrots, orange glass of water and cook whole. 
Add the spices - cinnamon, cloves and others which you want. 
When tender and volume of water is  decreased add gelling sugar. 
After 5-10 minutes, it should become dense. 
Remove from heat, put in jars and leave upside down.

bottom :



- 175g plain flour

- 100 g butter, cut into pieces
- 1 egg yolk


stuffing :


- 200g smoked bacon
- 50g Gruyere or other  cheese
- 200ml creme fraiche
- 3 eggs, well beaten
- pinch of ground nutmeg
- pepper


Preheat the oven to 190 degrees.



Prepare dough - knead with listed ingredients.

Care must be taken that the pastry has for about 30 minutes to be in the refrigerator 30 minutes before baking should be removed from the refrigerator.


While cakes are cooling prepare the stuffing.

Cut bacon and fry.
To the bowl add eggs, whisk to break down and add the creme fraiche .
Add pre- fried bacon, stir and season to taste - usually bacon is quite salty, so it's good to add pepper and nutmeg.


after 30 minutes, remove the dough and placed between the two pieces of baking paper.

Roll out the dough into a thin, round piece and place it in a baking tray.
Bake the base for 1 - minutes in an oven.

Pour the liquid filling on top and bake for about 30 minutes in 190 degrees.

Grilled asparagus salad

ingredients: 

- 500 g asparagus 
- chili peppers
- olive oil 
- salt, pepper 
- juice of lemon or lime 
- soy sauce (optional instead of salt) 
- spring onions 

Peel the asparagus. 
During this time, heat a frying pan and a little olive oil. 
Grill asparagus until tender. 
You can, in the meantime, add water or broth. 

Prepare the sauce: cut chili and spring onions  into small pieces. 
Mix the olive oil, soy sauce and season to taste.

Ingredients:


bottom

- 100g butter
- 1 whole egg
- 1 egg yolk (egg white will be added to cheese)
- 1/4 glass sugar
- 1 teaspoon of baking powder
- Up to 1.5 glass flour

With ingredients knead dough, roll out and paste plate.

curd

- 1kg cheese (I have used mascarpone)
- 250g of butter (previously removed from the refrigerator, so it is really soft)
- 1.5 glass of sugar
- 1 vanilla sugar
- 1 pudding (vanilla/cream)
- 8 eggs (yolks alone)
- 0.5 teaspoons baking powder
- candied orange peel


Blend soft fat, adding 3/4 cup sugar and vanilla sugar until a " something" creamy.
All the time mixing, slowly add pudding, cheese and egg yolks.

Beat the egg whites to stiff along with the rest of the sugar (3/4 cup). 
Slowly add to the cheese, stirring gently.
Finally add the baking powder and raisins (if desirable).


Put the cheese on a baking sheet. 
Bake at 160 degrees for about 60-70 minutes.

ingredients:

- 1 kohlrabi
- 3 carrots
- 9 eggs
- Salt, pepper
- Fresh herbs
- Grated cheese
- Oil for frying

Preheat oven to 180 degrees.

Peel vegetables, wash and cut into pieces.
Fry in a pan.
To the bowl add eggs and beat lightly.
Grease lightly Casserole.
Toss vegetables and pour the eggs.
Sprinkle with grated cheese.
Bake until the top will turn golden

Green beans in a creamy sauce


ingredients: 

- 750 g of beans 
- 50 g of butter 
- 50 g flour (I used corn) 
- 450ml milk 
- 100 ml of cream 
- salt, pepper and nutmeg to taste


Boil the beans in salted water. 
During this time, prepare the sauce. 
In a saucepan melt the butter and add the flour. 
While stirring add milk and cream. 
Season to taste. 
I added some smoked ham to the sauce.

Honey melon - mango smoothie


Honey melon - mango smoothie


ingredients: 

- 1 peeled mango 
- 1/2 a  honey melon
- water for dilution (this is quite sweet) 

Optional: ice cubes 


Combine all ingredients in a blender or food processor. 
Mix until all is thick and smooth. 
When this is too thick or too sweet add water or plant milk.
Cool in the refrigerator or add ice cubes.
