ingredients:
- 1/2 or 3/4 glass of red wine (you can also use other alcohol when baking at home, rum or whiskey is perfect for this purpose
- 250g of unsalted butter
- 2 glasses of sugar
- 4 spoons of cocoa (good cocoa, and actually the more cocoa you add the better! This will not kill you)
- 200 g of dark chocolate
- 2 glasses of flour
- 1 packaging of baking powder
- 4 eggs (free range, bio, actually rather good quality and known source)
- dried fruits (the best is to find own mix, i really love with almonds, raisins and cranberries)
Put wine, butter, cocoa and chocolate in a pot.
Cook slowly until everything is melted and alcohol evaporates.
Mix every now and then.
Set aside to cool down.
Sieve the flour with baking powder to one container.
To our smooth, gorgeous, cold but still liquid wine-cocoa-butter-chocolate mass add 4 whole eggs.
One at a time and mix vigorously so that the are good combined. Proceed with other 3 eggs.
Then add the sifted flour - add in portions, mix and add again.
At the end add the dried fruits.
Mix thoroughly.
Put in a baking tin (20x30cm) lined with baking parchment.
Bake in a 150-160 Celsius for about 20-30 minutes.
Cool down slowly.
